Welcome to the WeatherDuino Pro2 family, tyntop!
Uncle Bob has already replied (and very well) to your questions, so, I only add some bits...
From your present system, you can use the wind speed and wind direction sensors and the rain gauge. You will need a new outside temperature / humidity sensor (a module with an SHT10 or SHT11 is recomended).
About the pcb's, certainly you have followed the link provide by uncle_bob, and already know the prices, however at this moment I don't have any pcb in stock. A new small batch is already in production, I expect have them available again between 15 to 20 January 2015. The price will be the same!
The WeatherDuino Pro RX unit only supports one specific 1.8" TFT display (or a 20x4 LCD). Drive large TFT displays requires valuable ram, that we also need to run the code.
You can find in the forum, images from the actual 1.8" TFT display.
Regarding bigger TFT displays, soon (I can't say when) a new add on to the WeatherDuino Pro2 system will be presented. It will be called WeatherDuino Pro2 Wirelless Display and allows the use of specific 1.8", 2.2" and 2.4" TFT displays (more can be added in future).
The WeatherDuino Pro2 Wireless Display units are independent units, that show all your meteorological data in sync with your main RX unit. They will be VERY cheap to build, the ideia is to allow the user to have several weather displays in several places of the home or office, at a small cost. Think on it, as they are slave weather consoles.
