An update - the problem is fixed, but I don't know how or why!!

Thanks for the good news... I passed the day thinking about what could be the problem, without having any idea... I was at the point of suggesting you, to send back the board for me to analyse it.

My best guess is that due to some reason the module has entered in programming mode, when in this mode it doesn't even try to connect or accept AT commands.
