Can the TMP36 temperature sensor of the Pro2 transmitter unit be mapped in the Config_Options.h of the receiver unit under EXTRASENSORS_SOURCE?

No, it can't be mapped as an Extra Sensor. You just can see its readings on the System Info screen of the receiver.
